at the U.S. Department of Agriculture's Human Nutrition Research
Center discussed the benefits o Legumes including the reduced
risk of Coronary heart disease. Tulane University researchers
concluded that Legumes protected against heart disease because
of the possible protective properties of Calcium, fiber, folate,
magnesium, potassium or vegetable protein, but Dr. Klevay believes
Copper is the heart - healthy nutrient.
Dr. Klevay noted Copper deficiency affected
numerous characteristics such as, elevated Cholesterol, blood
pressure and uric acid, impaired Glucose tolerance, and oxidative
damage. In her conclusion, Dr. Klevay stated Copper supplements
have improved oxidative defenses in middle-aged people.
